Why is my strawberry pie runny?

by Kathy
(Battle Creek MI)

Ive tried to make a strawberry pie before (not this recipe) but it was runny! Before I try this recipe, do you have any helpful tips? Thanks!!

Answer

Hi Kathy!

I have a few suggestions. I would use fresh strawberries and make sure after you wash them they are dried a bit with a paper towel. If you use frozen strawberries they will be much wetter and can cause runniness.

If you are making my recipe, make sure you use the listed amount of corn starch to thicken the berry sauce. It should be thick like jam when you add your fresh strawberries. If it's still runny, add a bit more cornstarch.

Also, strawberry pie can be a bit runny the second day, that's normal!

Hope this helps!
